Norma Olvera, Ph.D. Executive Director

Dr. Olvera received her doctorate degree in Developmental Psychology with an emphasis on child health from the University Houston. Dr. Olvera is currently an Associate Professor at the Department of Health and Human Performance, University of Houston. Dr. Olvera has 17 years of expertise in the design, implementation, and evaluation of healthy lifestyle programs that involve nutrition education, behavioral modification, and exercise components. She has received numerous awards and federal and foundation funding. Dr. Olvera will be responsible for the overall administration of the BOUNCE Lite Summer Camp.



Brook Knox, M.Ed., R.D, L.D, Nutrition Program Director

Ms. Brook Knox is a registered and licensed dietitian with a Master’ s in Health Education in the Department of Health and Human Performance at the University of Houston.  She is a certified Pediatric Weight Loss Counselor.  Ms. Knox has also worked as the Kids Café Coordinator at the Houston Food Bank.  Ms. Knox spent a summer working with children at Camp La Jolla as a nutrition counselor and is a board member of the Greater Houston Nutrition Coalition.  Ms. Knox will be responsible for the design of the BOUNCE Lite Summer Camp nutrition curriculum, training of health educators, and supervision of the nutrition component.



Faye Hall Jackson, Ph.D., CHE – Hospitality Management Director

Dr. Faye Hall Jackson, Assistant Professor and Director, Hospitality Industry Diversity Institute at the Conrad N. Hilton College of Hotel and Restaurant Management.  Dr. Jackson’s specific area of contribution is in strategies related to healthy menu choices of food prepared away from home.  She also adds expertise in preparation of economical, nutritious meals that require regular stock culturally sensitive household ingredients.  Dr. Jackson is a Certified Hospitality Educator.



Rhonda Scherer, M.Ed. Fitness Program Director

Ms. Rhonda Scherer received a Master’s in Physical Education in Health and Human Performance at the University of Houston.  She has been assistant director for sports and fitness at the University of Houston-Downtown for 14 years where she supervises an extensive fitness program including aerobics class, specialty classes like hip hop, self defense, Pilates and yoga as well as a personal training program.  Ms. Scherer is certified as a personal trainer from Cooper Institute for Aerobics and Research in Dallas Texas and through Aerobic Fitness Association of America as well as an instructor for the World Instructor Training School for fitness professionals.  Her expertise is in exercise counseling and behavior modification.  Ms. Scherer will be responsible for the design of the BOUNCE Lite Summer Camp exercise curriculum and supervision of implementation of physical activities during the camp.



Dr. Jill A. Bush – Fitness Assessment Director

Dr. Jill Bush,  Assistant Professor, University of Houston, Department of Health and Human Performance. She received her Ph.D. in Kinesiology from Penn State University. She has intensive experience exercise and fitness testing.  She teaches several courses on exercise testing in the Department of Health and Human Performance.  She is a NSCA certified Strength and Conditioning Specialist (CSCS) and ACSM certified Exercise Specialist (ES).  She will be responsible for the BOUNCE Lite Summer Camp physiological and fitness assessments.



Mitzi Watkins, Program Coordinator

Ms. Watkins is an education student in the College of Education at the University of Houston. She is currently pursuing her certification in Early Childhood through 4th grade from the Quest (Quality Urban Education for Students and Teachers) program. She plans to continue her education to receive a Master’s in Early Childhood Education.


Gabriela Maldonado - Program Coordinator

 

Ms. Maldonado began her nutrition studies in Mexico, where she gained experience in clinical and community settings. She finished her B.S. in Human Nutrition and Foods at the University of Houston. Ms. Maldonado is currently working as nutrition coordinator in the B.O.U.N.C.E (Behavior Opportunities Uniting Nutrition Counseling and Exercise) program. Ms. Maldonado completed an internship program with The Coca-Cola Company in the Minute Maid division. She has been an active member of student organizations serving as President in Mexico, and Student Liaison with ADA. In addition she served as Student Liaison during 2006-2007 in the Houston Area Dietetic Association (HADA) and during 2007-2008 she will be serving as Membership Co-chair of HADA. Ms. Maldonado's interests are working in the community and she is looking to pursue her R.D. and a M.P.H.

Patricia Morales - Program Coordinator

Ms. Morales is currently working as a Health Educator at the Community Family Center. She has 16 years of experience teaching health education (e.g., parenting, nutrition, and communication classes) to families in diverse community health programs.


Instructors

Nutrition and health educators, beauty experts, counselors, exercise and fitness experts will be leading the BOUNCE Lite Summer Camp activities.

Interns and Volunteers

Nutrition, exercise science, health, exercise and counseling students from the University of Houston will assist instructors and staff during BOUNCE Lite Summer Camp activities.
